The thesis is articulated on the basis of the published papers, submitted or in preparation, wrote as first author during the research activity done under the scientific supervision of my PhD tutors: prof. Vittorino Novello and Dr.ssa Alessandra Ferrandino, belonging to the Viticulture Research Group at DiSAFA – University of Turin, that supported me in all activity done during the PhD program. Prof V. Novello was the mentor for the viticulture aspects, especially as to table grape, whereas Dr.ssa A.Ferrandino trained me on the analytical chemistry applied to viticulture, especially as to berry volatile compound analysis. During my PhD I had, together with my scientific tutors, a profitable collaboration with other researchers. Prof. Andrea Schubert as responsible of a financial support from CRC on ‘volatile compounds in non aromatic grape varieties’ and Dott. Kobus Hunter who, hosting me during my foreign research period in South Africa, planned the research activity carried on the shrinking of Shiraz berries. This research activity was lately deepened in Italy by the help of prof. Claudio Lovisolo. The main aims of my PhD research activity were: i) to study and describe the volatile compound evolution (by SBSE – GC/MS) during ripening of three non aromatic V. vinifera grape varieties (Barbera, Dolcetto and Nebbiolo)using ii) to characterize, with a multidisciplinary approach, the Vitis vinifera L. biodiversity in Piedmont in order to contribute to the realization of the on-line journal ‘Italian Vitis Database’ (ISSN2282-006x) (www.vitisdb.it); iii) to recover, characterize and evaluate the possible exploitation of crossbreeds created by prof. Giovanni Dalmasso in the past century, focusing the attention on table grape genotypes through the evaluation of their suitability in the modern table grape contest; iv) to understand the ‘berry shrivel’ physiopathy in the field grown Vitis vinifera L cv. ‘Shiraz’. The experiments were developed in order to: a) understand the xylematic flow from the plant towards the berry and from the berry towards the plant (xylematic back-flow) from post-fruitset to maturity; b) verify the phloematic flow from the plant towards the berry and vice versa at berry ripeness. The results of these research goals are organized in two different chapters: Chapter 3: Vitis vinifera L. varietal characterization and biodiversity exploitation. Chapter 4: Understanding the ‘berry shrinking’ physiopathy in cv ‘Shiraz’ (Vitis vinifera L), tracing xylematic and phloematic flows.
