The Italian swine market is going through a serious crisis due to a supply-side excess in pork used for prepacked PDO products and simultaneous increases in production costs. This phenomenon is particularly evident in the Piedmont swine sector, which is third largest on the national scale in terms of the number of head bred. In Piedmont, a full 88% of production is destined for processing as ham Crudo di Parma or Prosciutto di San Daniele, and this has crippled the development of the region's entire supply chain and the creation of added value.

Abstract
