Single nucleotide polymorphisms (SNPs) are single-nucleotide variations in the genome of different individuals belonging to the same species. Bacterial strains have been increasingly characterized with SNP-based genotyping, also considering the growing number of available whole genomes sequences. This chapter will provide an overview of some of the methods and applications developed for the SNP-based typing of food borne bacteria, divided based on two main principles: 1) hybridization, and 2) primer extension reaction.
