This paper moves from the analysis of the control system of the geographical signs of quality in order to focus on the problems of risk management in the food quality chain. The Author firstly defines the meaning of “quality” in the food industry. All subjective connotations (i.e. food quality) are excluded from the concept of “quality” and it seems preferable to adopt an objective and wide notion that includes the verification process of the compliance of the product to predetermined standards, which ensure the presence of certain qualities. The Author then focuses on the control system, which is divided into three levels: the first one is represented by the rules of coordination of the different controls (systemic control), the second one regroups the controls on processes and products (“market” control), the third one refers to the controls within the firms that are part of the supply chain (internal control). The examination of each level of control leads to some concluding remarks on the costs and benefits of the system of geographical signs and of existing external and internal risk management rules, and shows some possible areas of de jure condendo intervention.
