Strategic choices of italian food industry companies increasingly tend to prefere the recovery of tradition, the integration of production phases along the supply chain and the positioning based on quality and differentiation, rather than to an exclusively dimensional growth. Sustainability and economic balance are combining in a development model that takes into account the environmental fragility and social complexity of the sector. The process - size matrix proposed allows to understand the stages of activity, the relations with the value chain and the competitive advantage generated, in order to identify strategies for increasing product value and the fair remuneration of production.
