The Authors summarize the present knowledge on the relationships between milk protein polymorphism and milk quality and production in cattle. After giving an up-to-date list of the genetic variants at the alphas1-, alphas2-, beta- and kappa-casein and beta-lactoglobulin systems, the following aspects are pointed out: beta-lactoglobulin alleles and casein number; kappa-casein alleles and micelle size; alphas1-casein alleles and proportions of casein; casein variants and milk rennet-coagulation; protein polymorphism and cheese yield; protein polymorphism and milk production traits. The potential use of milk protein polymorphism in selection programmes is also discussed.
