To complete the characterization of the Piemontese steer, the effects of different age of castration on slaughter performance of 24 subjects (8 steers castrated at a pre-pubertal age, 8 steers castrated at a post-pubertal age, and 8 intact males), slaughtered at same age and fatness degree were investigated. The results show only minor differences between early and late castrated steers and intact males (head, shins, skin, intestines, offal, and right side weight). Based on slaughtering data there are no special advantages in delaying the time of castration, traditionally made at a pre-pubertal age.
