Hyperons embedded in the nucleus can be very useful probes to reveal quark degrees of freedom in nuclei. Furthermore they are distinguishable from mothet nucleons, because the hyperon shell-model orbits are not Pauli blocked, allowing to observe all the levels down to the ground state. The current puzzle of Sigma-hypernuclei is described and a new experiment with stopped K- is suggested for the facility DAFNE, the new Frascati phi factory.
