Abstract

Using our original cryostabilization technique, based on chilling of the fruit pulp in Ethylene Glycol 50% at -20°C, and subsequent infiltration and polymerization in Glycol Mehacrylate (Technovit 7100) at 10°C, we try to succesfully reveal polygalacturonase activity in unripened, ripened, overripened, spoiled and rotten fruits, also degraded by fungy.
