Mozzarella cheese is sell packaged in contact with its storage brine. Therefore it has to observe not only the chemical characteristic reported into the UNI10979 standard but also the 690/78 Italian law related to the preconditioning products. The aim of this work was to verify the chemical and weight characteristics of buffalo milk mozzarella (13 samples) and cow milk mozzarella (47 samples) cheeses present on Piedmont market. The results underlined that some products had a weigh lower that the one reported into the label and lower than the maximum error allow by the Italian law and a pH higher than the one reported into the UNI10979 standard.
