This work explores the extra virgin olive oil volatilome by GC×GC-MS/FID and evaluates the effectiveness of chromatographic fingerprinting in highlighting patterns characteristic for cultivar and cultivation practices (organic vs. conventional). Moreover, by accurate quantification of key-aroma compounds, aroma blueprint is unraveled completing the identitation process.
