The anthocyanin composition of four autochtonous grapevine varieties cultivated in the Piedmont mountains has been studied. The results showed great differences between these cultivars. The total amount of anthocyanin ranged from 74 mg/kg of Grisa roussa grapes to 1024 mg/kg of Becouet grapes but it is the anthocyanin profile that is most interesting. Cyanidin-3-glucoside and peonidin-3-glucoside (72.5 % of total anthocyanins) prevailed in Avanà; cyanidin-3-glucoside make up 94% of the total anthocyanins in Grisa roussa; malvidin-3-glucoside and its acyl-derivatives were highest (73%) in Becouet and all five anthocyanins were present in similar concentrations in Grisa nera.
